Prepare the Gulab Jamun Koftas

  • In a bowl, mash the gulab jamun. Add the grated cabbage, carrot, bell pepper, and crushed green peas. Mix well.

  • Add the corn flour and salt. Mix until a smooth dough forms.

  • Divide the dough into equal-sized balls.
  • Roll each ball between your palms to create smooth koftas.
  • Heat the oil in a pan over medium heat. Deep-fry the koftas until golden brown. This creates a crispy exterior and ensures the koftas hold their shape in the curry.

Make the Gravy

  • In a blender, combine the chopped onion, ginger, garlic, black peppercorns, cloves, green and black cardamom pods, cinnamon stick, mace blade, coriander powder, red chili powder, turmeric powder, Kashmiri red chili powder, and a little water. Blend into a smooth paste.
  • Heat the remaining oil in a pan. Add the blended spice paste and sauté until fragrant and the oil begins to separate from the spices. This process, called blooming, intensifies the flavors of the spices.
  • Add the milk and heavy cream. Mix well.
  • Add the tomato purée and plain yogurt. Mix well.
  • Add 1/2 cup of water. Bring to a simmer, then reduce the heat and cover the pan. Cook until the gravy thickens slightly.
  • Gently place the fried gulab jamun koftas into the gravy. Garnish with silver vark.
  • Garnish with fresh coriander leaves and serve hot.
