Prepare the Sugar Syrup

  • Combine sugar, saffron strands, and water in a deep pan. Bring to a boil, stirring continuously, and remove any scum that forms.
  • Reduce heat to low and simmer until the syrup reaches a thread-like consistency. Set aside, and give it another quick boil before using.

Prepare the Filling

  • In a small bowl, combine chopped pistachios, saffron (soaked in milk), and cardamom powder. Mix well to form a paste. Divide this paste into 20 equal portions.

Make the Gulab Jamun Dough

  • Sift together all-purpose flour and baking soda. Set aside.
  • In a bowl, thoroughly combine the khoya and chenna until you obtain a smooth, creamy texture.
  • Add the sifted flour mixture to the khoya and chenna mixture. Knead into a soft dough. Divide the dough into 20 equal-sized balls.
  • Cover the dough balls with a damp cloth to prevent drying.

Assemble and Fry

  • Gently flatten each dough ball and place a portion of the pistachio filling in the center. Seal the dough ball, ensuring the filling is completely enclosed. Shape into a smooth ball again.
  • Heat ghee in a heavy-bottomed pan or kadai over medium-low heat. Gently drop the dough balls into the hot ghee, ensuring not to overcrowd the pan.
  • Fry the Gulab Jamun over low heat, turning occasionally, until they are a deep golden brown. This will take approximately 3-4 minutes. Ensure the ghee maintains an even temperature for even cooking.
  • Remove the fried Gulab Jamun and place them on a paper towel-lined plate to absorb excess ghee.

Soak and Serve

  • Once the Gulab Jamun have cooled slightly (about 5 minutes), gently add them to the warm sugar syrup (avoid adding them to hot syrup as this will cause them to shrink).
  • Allow the Gulab Jamun to soak in the syrup for at least 1-2 hours, or preferably overnight, to allow them to absorb the flavors fully.
  • Serve warm or at room temperature, garnished with chopped pistachios or almonds. They are also delicious served with vanilla ice cream.
