- 1/3 tsp Mustard Seeds
- 1/2 tsp Split Chickpea split bengal gram
- 1 Chili broken into pieces, dried, red
- 1/2 Tbsp Curry Leaves
Garnish
- 1/2 Tbsp Coriander Leaves chopped

- 2 tsp Oil
Instructions
- Prepare the Medu Vada according to your preferred recipe.
- Remove excess oil from the Medu Vada by gently pressing them with a paper towel. This helps achieve a less greasy upma.
- Finely chop the onion, ginger, and green chilies.
- Crumble the Medu Vada into small pieces. You can pulse them briefly in a food processor or crumble them by hand.
- Heat the oil in a pan over medium heat. Add the mustard seeds and allow them to splutter. This releases their characteristic nutty flavor.
- Add the chana dal and broken red chili to the pan. Sauté until the dal turns golden brown.
- Add the chopped green chilies and onions to the pan. Sauté until the onions soften and become translucent.
- Add the curry leaves and salt. Sauté for another minute until fragrant.
- Add the crumbled Medu Vada to the pan and mix well with the sautéed ingredients. Cook for 2-3 minutes, allowing the flavors to meld.
- Garnish with fresh coriander leaves.
- Serve the Medu Vada Upma hot and enjoy!
