Ingredients
 

For the Medu Vada Batter

  • 1 cup Gram black, split black lentils; also known as urad bean
  • 1-2 tbsp Chili adjust to taste, finely chopped, green
  • 1 tsp Peppercorn black
  • 8-10 Curry Leaf
  • 1 tsp Ginger finely minced or grated
  • 1/2 - 1 tsp Salt to taste
  • 2 cup Oil for deep frying; vegetable or canola oil recommended

Prepare the Batter

  • Clean and rinse the urad dal thoroughly. Soak the dal in plenty of water for at least 4-6 hours, or preferably overnight.
  • Drain the soaked dal completely. In a blender, combine the drained dal, green chilies, black peppercorns, curry leaves, ginger, and salt.
  • Blend the mixture into a smooth, slightly thick batter. Add a little water if needed to achieve the desired consistency.

Shape the Vadas

  • Fill a bowl with water. Keep your hands wet while handling the batter to prevent it from sticking.
  • Take a small portion of the batter (about 1-2 tablespoons), and gently shape it into a small, flat disc in your wet palm.
  • Using your wet index finger, create a small hole in the center of each disc.

Fry the Vadas

  • Heat the oil in a deep pan or kadai over medium heat. The oil is ready when a small drop of batter sizzles immediately.
  • Carefully slide 2-3 vadas into the hot oil, ensuring not to overcrowd the pan.
  • Fry the vadas until they turn golden brown and crispy on both sides. This will take about 2-3 minutes per side.
  • Remove the fried vadas from the oil and place them on a plate lined with paper towels to absorb excess oil.
  • Repeat the frying process with the remaining batter.

Serve

  • Serve the hot, crispy Medu Vadas immediately with sambar and coconut chutney.
