Ingredients
For the Medu Vada
For the Sambar
- 1 cup Pigeon Pea arhar dal, soaked
- 2 cup Vegetable and carrot, chopped, cucumber, drumsticks, mixed, pumpkin, such as onion, tomato
- 1 tbsp Tamarind Pulp
- 1-2 tbsp Sambar Powder
- 20 Curry Leaf
For Frying and Tempering
- 250 ml Oil approximately 250 ml for deep frying vadas and tempering sambar and chutney
Instructions
Make the Medu Vada Batter
- Wash the urad dal thoroughly under cold water. Soak it in enough water for 2-3 hours.
- Drain the soaked urad dal. Grind it in a grinder or food processor until a smooth, fine paste forms.
- Add the finely chopped ginger, green chilies, and salt to the batter. Mix well.
- Whisk the batter vigorously for several minutes until it becomes light and fluffy. This incorporates air, resulting in lighter vadas.
Fry the Medu Vada
- Heat the oil in a heavy-bottomed deep pan over medium-high heat. The oil is ready when a small drop of batter sizzles and rises to the top.
- Wet your hands with water. Take a small portion of the batter and shape it into a doughnut or disc shape. Carefully slide the vada into the hot oil.
- Deep-fry the vadas in batches until they turn golden brown and float to the surface. This indicates they are cooked through.
For Sambhar
- In a pressure cooker, combine the soaked toor dal, salt, turmeric powder, sambar powder, and mixed vegetables.
- Add enough water to cover the ingredients. Pressure cook for 2-3 whistles, or until the dal and vegetables are tender.
- Once the pressure releases, stir in the tamarind pulp. In a separate small pan, heat one tablespoon of oil. Add mustard seeds and curry leaves. Once the mustard seeds splutter, pour this tempering over the sambar. Mix well.
For Coconut Chutney
- In a blender, combine the grated coconut, green chilies, chopped coriander, salt, and a little water. Blend until a smooth paste forms.
- Heat a small amount of oil in a pan. Add mustard seeds and curry leaves. Once they splutter, pour this tempering over the chutney.
- Serve the crispy medu vada hot with the flavorful sambar and refreshing coconut chutney.
