Cooking the Macaroni

  • Boil the macaroni in salted water according to package instructions until just tender. Drain and toss with a few drops of oil to prevent sticking. Set aside.

Making the Masala

  • Heat oil in a pan on medium heat. Add onion if using and saute until soft. Add capsicum and carrot, and cook for 2 to 3 minutes.
  • Add the tomato and cook until it softens, about 3 minutes. Add turmeric powder, red chilli powder and pav bhaji masala, and mix well.

Finishing

  • Add the cooked macaroni and tomato ketchup, and toss well to coat evenly. Add salt to taste and mix in coriander leaves.

Packing

  • Let the macaroni cool slightly and pack it in the tiffin box with cucumber slices and apple on the side.

Cucumber and apple add crunch and freshness alongside the tangy, masala-coated macaroni.

Make-Ahead Tip

Chop the vegetables the night before to speed up the morning cooking.

Quick Swap

Leave out the onion for a simpler no-onion version - the tomato and pav bhaji masala still give plenty of flavour. Plain garam masala works well if pav bhaji masala isn't available.

Allergen Note

Macaroni contains wheat/gluten. Check the label on store-bought ketchup and pav bhaji masala for any additional ingredients.

Spice Note

Red chilli powder and pav bhaji masala can both be reduced or left out for a milder version - this dish gets most of its flavour from the tomato and ketchup, so it stays tasty even without the added spice.

Packing Tip

Tossing the macaroni with a little oil after boiling keeps it from sticking together by lunchtime.
