Ingredients

- 1 cup Elbow Macaroni
- 8 oz Button Mushrooms sliced
- 1/2 cup Corn drained, frozen or canned, sweet
- 1 Onion finely chopped
- 2 clove Garlic finely chopped
- 2 Tbsp Parsley chopped, fresh

- 1 Tbsp Basil dried
- 2 Tbsp All-Purpose Flour
- 1/2 cup Milk
- 1 Tbsp Olive Oil
- 2 Tbsp Butter
Cheeses and Seasoning
- 1/2 cup Cheddar Cheese shredded
- 1/2 cup Parmesan Cheese grated
- 1 1/2 Tbsp Mozzarella Cheese shredded
- 1 1/2 tsp Salt or to taste
- Pepper black, freshly ground, to taste
Instructions
- Preheat oven to 400°F (200°C).
- Cook macaroni according to package directions in salted boiling water. Adding a few drops of oil helps prevent sticking. Drain and set aside.
- In a large skillet, melt butter with olive oil over medium heat.
- Add chopped onion and garlic to the skillet. Sauté for 2-3 minutes until softened and fragrant, but not browned.
- Add sliced mushrooms and cook until they release their moisture and soften, about 5-7 minutes.
- Stir in the sweet corn and cook for another 2-3 minutes.
- Sprinkle flour over the vegetables and cook for 1 minute, stirring constantly. This creates a roux which will thicken the sauce.
