Ingredients
 

Poha (Beaten Rice)

Spices & Aromatics

Vegetables & Nuts

  • 1/2 cup Peanuts also known as moongfali; roasted for enhanced flavor
  • 1/2 cup Peas also known as matar; fresh or frozen, green
  • 1 medium Onion finely chopped
  • 2-3 Chilies finely chopped; adjust to your spice preference, green

Instructions
 

Prepare the Poha

  • Wash the poha under running water until clean. Drain well and set aside.
  • Add sugar or sugar substitute to the poha and let it sit for a few minutes to soften.

Sauté the Nuts and Spices

  • Heat olive oil in a pan or wok over medium heat. Add roasted peanuts and sauté until lightly golden.
  • Add mustard seeds and fennel seeds. Sauté until the mustard seeds begin to splatter.

Add Aromatics and Vegetables

  • Add finely chopped green chilies and sauté for a minute. Add the chopped onion and curry leaves (if using), and sauté until the onions are softened.
  • Stir in green peas, turmeric powder, and salt. Cook for 2-3 minutes.

Combine and Finish

  • Add the prepared poha to the pan. Gently stir to combine all ingredients.
  • Sprinkle a little water to prevent dryness. Cover and cook for 2-3 minutes, or until heated through.
  • Remove from heat. Squeeze in the juice of one lemon.

Garnish and Serve

  • Garnish with fresh coriander leaves. Serve hot as a delicious breakfast dish. Enjoy!
