Ingredients
Dairy
- 500 ml Milk full-fat milk is essential for achieving the desired creamy texture.
- 150 ml Heavy Cream adds richness and creaminess; amul fresh cream is recommended, but any heavy cream will work.
- 100 gm Sweetened Milk condensed
Spices & Sweetener
Garnish
- 1/2 cup Almonds blanched and slivered
- 1/2 cup Pistachios shelled and slivered
- 1/2 tsp Water for blanching almonds
Instructions
Prepare the Nuts
- Blanch the almonds by soaking them in boiling water for 5 minutes. Transfer to a bowl of ice water. Peel off the skins and sliver the almonds. Sliver the pistachios as well.
Cook the Milk Mixture
- In a heavy-bottomed pan over low heat, combine the milk, heavy cream, and cardamom pods. Simmer gently, stirring every 2-3 minutes to prevent sticking and burning, until the mixture reduces by half (approximately 250 ml).
Sweeten and Finish
- Stir in the sweetened condensed milk and sugar. Continue cooking for another 5-7 minutes, stirring occasionally. Add the slivered almonds and pistachios. Cook for 2 minutes more.
Rest and Serve
- Remove the cardamom pods. Remove from heat and let the Kheerni rest, covered, for at least 10 minutes. This allows it to thicken further. Serve warm or chilled.
