Begin the Rabdi Magic

  • In a heavy-bottomed pan, pour in 5 cups of whole milk. Heat over medium heat, stirring occasionally to prevent sticking.

Creating the Creamy Layers

  • As the milk heats, a layer of cream will begin to form on the surface. Gently push this cream layer towards the sides of the pan using a spatula.

Patience is Key

  • Continue to simmer the milk, collecting the cream layers as they form. Stir gently but regularly to avoid burning the milk at the bottom.

Sweetening and Flavoring

  • Once the milk has reduced by about half, add 1/2 cup of sugar and 1 teaspoon of cardamom powder. Keep collecting the cream from the sides and incorporating it back into the milk.

Final Touches

  • When the milk has reduced to approximately 1/4 of its original quantity, scrape all the accumulated cream from the sides of the pan, and mix it thoroughly into the milk. Stir in 1 teaspoon of rose water.

Serving Your Rabdi

  • Remove from heat, allow to cool completely, and refrigerate until chilled. Serve chilled and garnished with sliced pistachios.
