Reducing the Milk

  • Once boiling, reduce heat to medium-low. Stir continuously to prevent sticking and burning. The milk will gradually thicken and reduce in volume.

Removing Milk Solids

  • As the milk reduces, use a spatula to scrape down the sides of the pan, incorporating any milk solids that form.

Achieving Palkova Consistency

  • Continue stirring and reducing the milk until it reaches a thick, creamy consistency similar to fudge. This process takes approximately 20-25 minutes. If using ghee, add it at this stage to aid in preventing sticking.

Sweetening the Palkova

  • Stir in the sugar and cardamom powder (if using) and continue to cook for another 2-3 minutes, until the sugar dissolves completely and the mixture is well combined.

Cooling and Serving

  • Remove from heat and transfer the Palkova to a serving plate or container. Let it cool completely at room temperature before refrigerating.
