Ingredients

- 1 ltr Milk
Sweetener & Spices
- 300 gm Sugar adjust to your sweetness preference, granulated
- 1 tsp Cardamom Powder freshly ground for best flavor
Nuts & Seeds
- 4 tbsp Almonds blanched, and finely chopped, skinned
- 4 tbsp Charoli Seeds also known as bugle seeds, bugles
Optional additions
- 1 pinch Saffron Threads soaked in 2 tablespoons of warm milk for 15 minutes
Instructions
Preparation
- Soak almonds and charoli seeds in warm water for at least 30 minutes. Blanch, skin, and finely chop the almonds.
Simmering the Milk
- In a heavy-bottomed pan or pot, combine the whole milk and sugar. Heat over medium heat, stirring frequently to prevent sticking or burning.
Continued Simmering and Reduction
- Continue simmering the milk for 45-60 minutes, stirring regularly. Reduce the heat if the milk starts to boil vigorously. The milk will gradually thicken.
Adding Flavor
- Once the milk has reduced and thickened significantly (it should coat the back of a spoon), stir in the chopped almonds, charoli seeds, and cardamom powder. If using, add the saffron milk at this stage.
Finishing Touches
- Continue to simmer for another 5-10 minutes, stirring frequently, until the desired consistency is reached. Remove from heat and allow the Basundi to cool completely.

- Serve chilled or at room temperature. Garnish with extra chopped nuts or a sprinkle of cardamom powder, if desired.
