Ingredients
 

For the Saffron Kulfi:

  • 1 ltr Milk
  • 1 slice Bread use brown bread for a richer color. about 1/4 of a standard loaf., white
  • 1 tsp Cardamom also known as elaichi powder, powder
  • 1 cup Sugar granulated
  • 1 tbsp Cornstarch corn flour
  • 2 tbsp Pistachios finely chopped
  • 1/4 tsp Saffron strands

For the Chia Seed Milk:

For the Garnish:

  • 2 cup Mango diced, ripe mangoes
  • Optional Fruits chopped almonds, dry, for garnish (e.g., pistachios)

Instructions
 

Prepare the Chia Seed Milk

  • Soak chia seeds in 1/2 cup of milk overnight in the refrigerator. This will create a creamy, pudding-like consistency.

Prepare the Kulfi Base

  • Remove the crusts from the bread slice and cut it into small pieces.
  • In a blender, combine the bread, cornflour, and 1/2 cup milk. Blend until completely smooth.
  • In a heavy-bottomed saucepan, bring the remaining milk to a simmer over medium heat, stirring frequently to prevent scorching.
  • Reduce heat to low and gently whisk in the bread-milk mixture. Cook, stirring constantly, until the mixture thickens (about 5-7 minutes).
  • Stir in the sugar and continue to cook for 2-3 minutes, or until the sugar dissolves completely.
  • Stir in the chopped pistachios and saffron threads. Cook for another 2 minutes.
  • Remove from heat and stir in the cardamom powder.
  • Let the mixture cool completely before proceeding.

Freeze the Kulfi

  • Pour the cooled kulfi mixture into an airtight container and freeze for at least 6-7 hours, or until solid.

Assemble and Serve

  • Layer 2 tablespoons of the chia seed milk mixture in each margarita glass.
  • Top with the diced mangoes.
  • Carefully scoop the frozen kulfi and place it on top of the mangoes.
  • Garnish with your choice of dry fruits, if desired.
  • Serve immediately and enjoy!

  • For an even creamier Kulfi, use full-fat milk and high-quality saffron threads.
  • To prevent ice crystals from forming, ensure the kulfi mixture is completely cool before freezing. You can even chill it in an ice bath for faster cooling.
  • If you don't have a margarita glass, you can use any small dessert glass or bowl.
