  • Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on two sides to create a sling for easy removal.
  • In a large bowl, combine the rolled oats, oat flour, desiccated coconut, millet flakes, cocoa powder, salt, and cinnamon.
  • In a separate bowl, whisk together the peanut butter, melted coconut oil, and honey (or date syrup) until smooth.
  • Pour the wet ingredients into the dry ingredients and stir until well combined.

  • Transfer the mixture to the prepared pan and spread evenly. Using a piece of parchment paper to protect your hand, firmly press the mixture into the pan, ensuring it's compact and level in all corners. This will help the bars hold their shape.
