Ingredients
Dry Ingredients
- 1 cup Rolled Oats (75g)
- 1/4 cup Oat Flour (20g)
- 3/4 cup Desiccated Coconut (60g)
- 1/2 cup Millet Flakes (65g)
- 1/4 cup Cocoa Powder
- 1/2 tsp Salt
- 1/4 tsp Cinnamon ground

- 1/4 cup Peanut Butter (65g)
- 1/4 cup Coconut Oil melted
- 1/4 cup Honey Or Date Syrup (85g)
Instructions
- Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on two sides to create a sling for easy removal.
- In a large bowl, combine the rolled oats, oat flour, desiccated coconut, millet flakes, cocoa powder, salt, and cinnamon.
- In a separate bowl, whisk together the peanut butter, melted coconut oil, and honey (or date syrup) until smooth.
- Pour the wet ingredients into the dry ingredients and stir until well combined.
- Transfer the mixture to the prepared pan and spread evenly. Using a piece of parchment paper to protect your hand, firmly press the mixture into the pan, ensuring it's compact and level in all corners. This will help the bars hold their shape.
- Bake for 25-30 minutes, or until the edges are golden brown and the top is lightly browned.
- Let the bars cool completely in the pan before cutting. Chilling them in the refrigerator will make them even firmer and easier to cut cleanly.
- Once cooled, lift the bars out of the pan using the parchment sling. Transfer to a cutting board and cut into desired sizes using a sharp, serrated knife with a gentle sawing motion.
