Prepare the Aniseed Infusion

  • Place the aniseed and 3 tablespoons of water in a small saucepan. Bring to a boil over high heat and simmer for 2 minutes, or until the mixture is reduced to about 1/3 of its original volume. Strain the mixture and set aside to cool.

Combine Wet Ingredients

  • In a medium bowl, whisk together the milk and powdered sugar until the sugar is completely dissolved. Add the vegetable oil and the cooled aniseed infusion. Whisk well with a wooden spoon until thoroughly combined.

Combine Dry Ingredients

  • In a large bowl, sift together the flour, baking powder, and ground turmeric. Make a well in the center of the dry ingredients.

Combine Wet and Dry Ingredients

  • Gradually pour the wet ingredients into the well of the dry ingredients, folding gently with a spatula until just combined. Be careful not to overmix.

Prepare and Bake the Cake

  • Preheat your oven to 180°C (350°F) for 10 minutes. Grease a 6-inch cake pan and line the bottom with baking paper. Pour the batter into the prepared pan.
  • Scatter the pine nuts and sesame seeds evenly over the top of the batter.
  • Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean.

Cool and Serve

  • Let the cake cool in the pan for 5 minutes before transferring it to a wire rack to cool completely. Once cooled, slice and serve. Enjoy!
