Ingredients
For the Falafel
- ½ cup Kabuli Chickpeas soaked overnight
- ¼ cup Mung Bean green, soaked and drained
- 1 inch Ginger chopped
- 3 Chillies chopped, green
- 1 tbsp Mint Leaves chopped
- 1 tbsp Coriander chopped
- ¼ cup Dill chopped, fresh
- ½ tsp Cumin Seeds
- ¼ tsp Pepper black
- 1 ½ tsp Salt or to taste
- 1 pinch Baking Soda
For the Yogurt Dressing
- 1 cup Yogurt
- ½ tsp Garlic minced
- ¼ cup Spring Onions chopped, white and green parts
For Assembling the Wraps
- 9 Pita Breads
- ½ cup Tomatoes sliced
- ½ cup Lettuce shredded
- ¼ cup Tahini optional
Instructions
- In a food processor, combine the soaked chickpeas, green moong dal, ginger, green chilies, mint, cilantro, and dill.
- Pulse until coarsely ground. Avoid over-processing to prevent a pasty texture.
- Transfer the mixture to a bowl and add the cumin seeds, black pepper, salt, and baking soda. Mix well.
- Shape the falafel mixture into small, flat patties or balls.
- Heat oil in a large skillet over medium-high heat. Fry the falafel until golden brown and crispy, about 3-4 minutes per side.
