Instructions

Prepare the Filling

  • Combine mozzarella, feta, parsley, and nutmeg in a bowl. Gently crush with a fork until the mixture resembles a thick paste.

Prepare the Dough

  • If using store-bought dough, thaw completely. Lightly flour a clean surface and knead the dough until smooth and elastic. Roll the dough into a log and cut into 10 equal pieces.

Shape the Fatayer

  • Roll each dough piece into an oval. Place about 2 tablespoons of cheese filling down the center. Fold the top left corner over the filling, then fold the opposite side over to create a half-moon shape, pinching to seal.
  • Repeat the folding process at the bottom to completely enclose the filling.

Bake the Fatayer

  • Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper. Brush the fatayer with milk (or melted butter) and sprinkle with nigella seeds (optional).
  • Arrange on the prepared baking sheet and bake for 10-15 minutes, or until golden brown.

Serve and Enjoy

  • Remove from oven and let cool slightly before serving. Enjoy warm!

Recipe Notes

Expert Tips for Perfect Cheese Fatayer

  • For extra flavor, add a pinch of salt and black pepper to the cheese filling.
  • If your dough is too sticky, add a little more flour when kneading.
  • Don't overcrowd the baking sheet; this ensures even baking and golden-brown pastries.
  • For a richer flavor, use a combination of feta and halloumi cheese in the filling.
