Ingredients
For the Strawberry Compote
- 1 cup Strawberries fresh, hulled and diced
- 1/2 cup Sugar granulated; adjust to taste depending on strawberry sweetness
- 1 tbsp Lemon Juice freshly squeezed
For the Cream Mixture
- 150 gm Heavy Cream cold, full-fat recommended
- 100 gm Cream Cheese softened
- 100 gm Cream store-bought or homemade; non-dairy optional, whipped
- 4 tbsp Icing Sugar powdered sugar, sifted
- 1 tbsp Gelatin bloomed according to package directions; adds stability, optional
Instructions
Prepare the Strawberry Compote
- Combine diced strawberries, sugar, and lemon juice in a non-stick pan over low heat. Stir frequently. After 5 minutes, mash the berries lightly. Continue cooking until the mixture thickens (about 10-15 minutes). Perform the jam test (see note below).
- Let the compote cool completely before storing in an airtight container in the refrigerator.
Prepare the Cream Mixture
- If using gelatin, bloom according to package instructions.
- In a chilled bowl, beat heavy cream with 2 tablespoons of icing sugar until soft peaks form. In a separate bowl, beat softened cream cheese with 2 tablespoons of icing sugar until smooth. Gently fold the whipped cream and the cream cheese mixture together. If using, gently fold in bloomed gelatin.
Assemble the Dessert
- Layer 1 tablespoon of the cream mixture in individual dessert bowls. Chill for 30 minutes until slightly firm.
- Top with 1 tablespoon of strawberry compote. Chill again for another 30 minutes.
- Add another layer of cream mixture and chill until set. Garnish as desired.
- Serve chilled.
- Jam Test: Put a drop of compote on a cold plate. Run a finger through the center. If the opening remains, it's done. If not, cook a bit longer.
