Ingredients
For the Kheer
- 1 ltr Milk whole
- 5 Tbsp Sugar or as needed
- 1/2 tsp Cardamom ground
- 1.5 pinch Saffron Strands
- 3 Oranges segmented, with thin white outer skin removed and deseeded
Instructions
- In a non-stick pan, bring the whole milk to a boil over medium-high heat.
- Reduce the heat to low and simmer, stirring occasionally to prevent sticking and scorching. Scrape down the sides of the pan as needed.
- Continue simmering until the milk has reduced to about half its original volume. This concentrates the milk's flavor and creates a creamy texture.
- Add the sugar, ground cardamom, and saffron strands. Stir well to combine.
- Continue simmering for 5 minutes, allowing the flavors to meld. Then, remove from heat.
- Let the kheer cool completely at room temperature. Once cooled, gently fold in the orange segments.
- Refrigerate the kheer for at least 5-6 hours, or preferably overnight, to allow the orange flavors to fully infuse.
- To create optional orange baskets for serving, use a sharp knife to carefully cut a handle and a circular opening into the top of each orange, as shown in the images.
- Peel the orange around the cut lines, being careful not to damage the handle.
- Continue peeling until the orange fruit is released from the peel. Scoop out the fruit segments, reserving them for the kheer or another use.
- Fill the orange baskets with the chilled Komola Kheer and serve.
