Ingredients
 

For Saffron Infusion

  • 2 tbsp Milk warm milk
  • 1 pinch Saffron Strands use high-quality saffron for best results.

For the Rice

For the Phirni

  • 1 ltr Milk full-fat milk; coconut or almond milk can be substituted.
  • 0.75 cup Milk low-fat milk
  • 1/3 cup Almond Flour also known as powdered almonds; adjust to taste.
  • 0.5 cup Date Palm Jaggery scraped, or granulated sugar (adjust to taste).
  • 0.5 tsp Cardamom Powder adjust amount to taste.
  • 2 tbsp Nuts finely chopped; almonds and pistachios recommended., mixed
  • 1 tbsp Water for dissolving jaggery if needed.

Prepare the Saffron Infusion

  • Soak saffron strands in 2 tbsp of warm milk. Set aside.

Prepare the Rice

  • Wash the rice 2-3 times. Soak for 30 minutes in plenty of water. Drain and dry completely on a kitchen towel (approx. 1.5 hours).
  • Grind the rice into a semolina-like consistency using short pulses, without adding water. Set aside.

Prepare the Jaggery (If Using)

  • If your jaggery has impurities, dissolve it in 1 tbsp of water over low heat until completely dissolved. Strain to remove impurities. Set aside.

Cook the Phirni

  • Heat 1 liter of milk in a heavy-bottomed pot until boiling, stirring occasionally. Reduce heat and simmer until reduced to 3/4 of its original quantity.
  • Stir in the saffron milk.
  • In a separate bowl, combine 0.75 cups milk, almond flour, and ground rice. Stir well.
  • Add the rice mixture to the simmering milk, stirring continuously until thickened to a pourable consistency (approximately 10 minutes). Stir constantly to prevent burning.
  • Remove from heat and stir in the jaggery (cook for a couple of minutes if using dissolved jaggery).
  • Immediately pour the hot phirni into prepared earthenware pots or serving bowls.

Chill and Serve

  • Wash and soak earthenware pots in water for at least 10-12 hours, then dry completely before using (optional). Let the phirni cool completely, then refrigerate for at least 2 hours without covering to allow a skin to form.
  • Once chilled, garnish with chopped nuts and serve immediately.

  • For an extra creamy texture, use full-fat milk and a slightly finer rice grind.
  • Adjust the sweetness to your liking by increasing or decreasing the amount of jaggery or sugar.
  • Using high-quality saffron will significantly enhance the flavor and aroma of your phirni.
  • If you don't have earthenware pots, individual ramekins or small bowls work equally well.
