For the Phirni:

  • 1.25 liters Milk full-fat milk recommended for richness
  • 1/4 cup Basmati Rice soaked for at least 1.5 hours
  • 1 gm Saffron Strands high-quality saffron, lightly toasted for enhanced flavor
  • 30 grams Pistachios shelled, for blending into the pudding
  • 1/2 cup Sugar adjust to your preferred sweetness
  • 0.5 tsp Cardamom Powder finely ground green cardamom powder
  • 1 tbsp Rose Water

Instructions
 

Prepare the Rice

  • Pick, wash, and soak 1/4 cup basmati rice for at least 1.5 hours.

Toast the Saffron and Pistachios

  • Gently toast 1 gram of saffron strands in a dry pan until fragrant. Set aside. Blanch 30 grams of pistachios, peel, and roughly chop them.

Cook the Phirni

  • Boil 1.25 liters of full-fat milk in a heavy-bottomed pan. Drain the soaked rice and grind it coarsely. Add the ground rice to the boiling milk, stirring constantly to prevent lumps and burning.

Add Sweeteners and Spices

  • Stir in 1/2 cup of sugar, 0.5 teaspoon of cardamom powder, and the toasted saffron. Continue to stir until the mixture thickens.

Finish and Chill

  • Stir in 1 tablespoon of rose water. Remove from heat once the desired thickness is reached. Pour into individual serving dishes (earthenware pots are traditional). Refrigerate for at least 1-1.5 hours to allow it to chill and set.

Garnish and Serve

  • Garnish with slivered pistachios, broiled saffron strands, and dried rose petals before serving chilled.
