Ingredients
- 1/4 cup Rice
- 1 tsp Rice Flour
- 1/1/2 ltr Milk full cream
- 1/2 cup Mango Puree
- 1 tbsp Sugar or as per taste
- 6 Saffron Strands
- 1/2 cup Nuts for garnish
- 1 tsp Cardamom Powder
Instructions
Prepare the Rice
- Soak the saffron strands in 2 tablespoons of warm milk for at least 15 minutes to release their color and flavor. Rinse the basmati rice thoroughly under cold water and soak for 10 minutes. Coarsely grind the soaked rice in a blender or food processor until it forms a paste.
Cook the Phirni
- In a heavy-bottomed pan, bring the full-fat milk to a boil over medium heat. Reduce the heat to low and gradually whisk in the rice paste and rice flour, ensuring no lumps form. Stir continuously for about 5-7 minutes.
Add Flavor & Sweetness
- Once the mixture thickens, add the sugar, saffron milk (including the strands), cardamom powder, and stir well. Continue to cook for another 5-7 minutes, stirring frequently to prevent sticking or burning.
Incorporate Mango & Chill
- Remove from heat and let the phirni cool slightly. Gently stir in the mango puree until evenly distributed. If the phirni is too thick, add 2-3 tablespoons of warm milk to adjust the consistency.
Serve Chilled
- Transfer the phirni to a serving bowl or individual serving dishes. Let it cool completely before refrigerating for at least 2 hours to allow the flavors to meld and the phirni to set. Garnish with chopped nuts before serving chilled.
Recipe Notes
Expert Tips for the Perfect Mango Phirni
- Use good quality ingredients: The flavor of your phirni greatly depends on the quality of your milk, rice, and mangoes. Full-fat milk is crucial for creaminess.
- Don't rush the cooking process: Low and slow cooking is key to preventing lumps and achieving the perfect creamy texture. Stir frequently to avoid sticking.
- Adjust sweetness to your liking: Taste the phirni before adding all the sugar and adjust the amount based on your preference.
- Get creative with garnishes: Elevate your phirni by adding other garnishes like rose petals, shredded coconut, or a sprinkle of cardamom powder.
