Ingredients
For the Tandoori Marinade
- 500 gm Chicken 4 large pieces
- 1 tbsp Ginger-Garlic Paste
- 2 tbsp Yogurt
- 1 tbsp Chili Powder red
- 1.5 tsp Salt or to taste
- 1 pinch Orange Food Coloring tandoori color (optional)
For the Spice Paste
- 1 Onion roughly chopped
- 1 inch Cinnamon Stick
- 3 clove Cloves
- 5 Peppercorns black
- 1 Cardamom Pod green
- 1 Cardamom Pod black
Instructions
- Using a fork, pierce the chicken pieces all over. This helps the marinade penetrate deeply, resulting in more flavorful and tender chicken.
- In a blender or food processor, combine the chopped onion, cinnamon stick, cloves, black peppercorns, green cardamom pod, and black cardamom pod. Process into a smooth paste.
- In a large bowl, combine the pierced chicken pieces, ginger-garlic paste, yogurt, red chili powder, salt, and the spice paste. Mix thoroughly, ensuring the chicken is well coated. If using, add the orange food coloring for a vibrant Tandoori color.
- Cover the bowl and refrigerate for at least 3 hours, or preferably overnight. Marinating allows the chicken to absorb the flavors fully.
- Heat the oil in a large skillet or grill pan over medium heat. Add the marinated chicken pieces and cook for about 5-7 minutes per side, or until cooked through and slightly charred. Reduce the heat if the chicken browns too quickly.
- In the last few minutes of cooking, pour the melted butter over the chicken. This adds richness and enhances the flavor.
- Serve the Tandoori Chicken hot, garnished with fresh cilantro and a wedge of lime. Enjoy!
Recipe Notes
Good To Know
- For extra smoky flavor, briefly place a small piece of hot charcoal in a heatproof bowl within the marinating chicken, drizzle with a few drops of ghee, and cover tightly for 5 minutes before grilling to infuse authentic tandoor smokiness.
- If you don’t have a tandoor or grill, roast the marinated chicken on a wire rack in the oven at a high temperature (220°C/425°F) and switch to the broiler for the last 3-5 minutes to achieve a charred effect.
- Grind your own whole spices—such as cinnamon, black pepper, and cardamom—for the marinade to maximize aroma and flavor intensity.
- For a dairy-free version, substitute yogurt in the marinade with coconut cream or cashew paste, which helps keep the chicken moist and adds a subtle richness.
Expert Tips
- Marinate the chicken for at least 4 hours, or preferably overnight, for maximum flavor penetration and tenderization.
- Don't overcrowd the grill or baking sheet, ensuring adequate space between chicken pieces for even cooking.
- Use a meat thermometer to ensure the chicken reaches an internal temperature of 74°C (165°F) for food safety.
Storage Instructions
- Store leftover tandoori chicken in an airtight container in the refrigerator for up to 3 days.
- Reheat gently in the oven or microwave, ensuring it's heated through before serving.
