Ingredients
Chicken Marinade
- 800 gm Chicken Breast skinless
- 2 tbsp Tomato Sauce
- 4 tbsp Lemon Juice
- 5 tbsp Greek Yogurt or hung curd
- 2 tsp Salt
- 4 tbsp Olive Oil
- 2 tbsp Garlic finely minced
- 1 tbsp Ginger minced
- 2 tbsp Thyme
- 2 tbsp Paprika
- 2 pinch Nutmeg optional
Shawarma Assembly
- 3 Tomatoes grilled
- 8 Pita Bread
- 1/2 cup Garlic Sauce
- 1/2 cup Cucumbers pickled
- 2 cup French Fries
- 1 1/2 cup Lettuce thinly sliced
Homemade Pita Bread
- 2 cup Whole Wheat Flour whole
- 1 tbsp Yeast
- 1 tsp Sugar
- 1 tbsp Olive Oil
- 1 cup Water warm
Garlic Sauce
- 1 bulb Garlic
- 1/4 cup Lemon Juice
- 3/4 cup Olive Oil
- 1/2 tsp Salt
Instructions
Marinate the Chicken
- Rinse the skinless chicken breasts under cold water. Slice them horizontally into thin cutlets, about 1/2-inch thick.
- In a bowl, combine the chicken with all the marinade ingredients. Mix thoroughly to ensure the chicken is evenly coated.
- Cover the bowl and refrigerate overnight, or for at least 8 hours, to allow the chicken to marinate fully. This develops deep flavor and tenderizes the chicken.
Grill the Chicken and Tomatoes
- Preheat a panini grill or grill pan to medium heat. Grill the marinated chicken for about 7-8 minutes per side, or until cooked through and slightly charred. Simultaneously, grill the tomato halves until softened and slightly grill-marked.
- Once the chicken is cooked, let it rest for a few minutes before thinly slicing or shredding it.
Assemble the Shawarma
- Warm the pita bread. Spread a generous layer of garlic sauce over each pita.
- Arrange the shredded chicken down the center of the pita. Top with grilled tomato slices, pickled cucumbers, French fries, and a sprinkle of lettuce. Fold the pita in half or wrap it tightly.
Make the Pita Bread (Optional)
- In a large bowl, combine the whole wheat flour, yeast, sugar, olive oil, and warm water. Knead the mixture for 5-7 minutes until a smooth and elastic dough forms.
- Cover the dough and let it rise in a warm place for about 1 hour, or until doubled in size.
- Punch down the risen dough and divide it into 8 equal pieces. On a lightly floured surface, roll each piece into a thin, round disc.
- Preheat oven to 350°F (175°C). Brush the pita rounds with olive oil and bake for 10-12 minutes, or until puffed up and lightly golden.
Make the Garlic Sauce
- In a food processor or blender, combine the garlic cloves, lemon juice, and salt. With the motor running, slowly drizzle in the olive oil until the sauce is smooth and emulsified.
Make the Pickled Cucumbers
- Thinly slice the cucumbers and place them in a jar or container. Pour the white vinegar over the cucumbers, ensuring they are fully submerged. Cover and refrigerate for at least 30 minutes before using. These quick pickled cucumbers add a tangy crunch.
