  • Preheat a pan over medium heat. Add the cashews and toast for 2 minutes, stirring constantly, until fragrant. This removes excess moisture and enhances their flavor.
  • Transfer the toasted cashews to a blender or food processor. Grind into a fine powder.
  • Sift the cashew powder through a fine-mesh sieve to ensure a smooth dough. Store any leftover cashew powder in an airtight container in the refrigerator for future use.
  • In a bowl, combine 1 cup of the sifted cashew powder and the condensed milk. Knead until a soft, pliable dough forms.
  • Cover the dough and let it rest for 10 minutes. This allows the dough to relax and become easier to roll.
  • While the dough rests, prepare the date filling. Combine the pitted dates and milk powder (if using) in a blender or food processor. Process until a smooth paste forms.
  • Place a sheet of plastic wrap on a clean, flat surface. Place the cashew dough on the plastic wrap and top with another sheet. Roll the dough into a thin, large circle, using the plastic wrap to prevent sticking.
  • Carefully remove the top sheet of plastic wrap. Spread the date paste evenly over the rolled-out dough.
  • Using the bottom sheet of plastic wrap as a guide, tightly roll the dough into a log. Gently press the edge to seal.
  • Wrap the log tightly in the plastic wrap and refrigerate for at least 30 minutes. This firms the roll, making it easier to slice.
  • Remove the chilled roll from the refrigerator and unwrap it. Slice the log into ½-inch thick rounds, resembling bhakarwadi.
