  • Wash and trim the ends of the bitter melons. Thinly slice them into rounds, discarding the seeds.
  • In a pot, combine 2 cups of water, ½ teaspoon of salt, and ½ teaspoon of turmeric powder. Bring to a boil.
  • Add the sliced bitter melon to the boiling water. Parboil for 4-5 minutes to reduce the bitterness. This step also helps to maintain the bitter melon's vibrant green color.
  • Drain the bitter melon using a colander and set aside.
  • Heat 5 teaspoons of oil in a pan or skillet over medium heat.
  • Add ½ teaspoon of mustard seeds, ½ teaspoon of cumin seeds, and ¼ teaspoon of asafoetida to the hot oil. Once the mustard seeds begin to pop, add the cashews.
  • Sauté the cashews until they turn golden brown and fragrant.
  • Add the parboiled bitter melon slices to the pan. Sauté for 1 minute, stirring constantly.
  • Add ½ teaspoon of red chili powder, ¼ teaspoon of turmeric powder, ¼ teaspoon of coriander powder, ¼ teaspoon of garam masala, ½ teaspoon of salt, and 1 teaspoon of sugar. Mix well to coat the bitter melon evenly with the spices.
  • Stir in 4 teaspoons of tamarind chutney, ¼ cup of water, and 3 ½ teaspoons of peanut powder. Combine thoroughly.
  • Cover the pan and simmer over low heat for 5 minutes, allowing the flavors to meld. This creates a richer, more complex flavor profile.
  • Serve the Kaju Karela hot with chapati or rice.
