Ingredients
Agar-Agar Base
- 15 gm Agar-Agar Powder
- 650 ml Water
- 75 gm Sugar
White Layer
- 1 cup Tender Coconut Meat chopped, or lychees
Green Layer
- 1/2 tsp Food Coloring green
- 1 cup Kiwi peeled and diced
Red Layer
- 1/2 tsp Food Coloring red
- 1 cup Strawberries hulled and diced
Garnish and Nuts
- 1/4 cup Almonds slivered
- 1/4 cup Pistachios flaked
- 1/4 cup Gems Candy optional, or yum yum candy
Instructions
- In a saucepan, combine the agar-agar powder and water. This allows the agar-agar to properly hydrate.
- Add the sugar and bring the mixture to a boil over medium heat, stirring constantly to prevent sticking. Boiling ensures the agar-agar dissolves completely.
- Reduce the heat to low and simmer for 5 minutes, stirring occasionally. Simmering helps activate the gelling properties of agar-agar.
- Strain the mixture through a fine-mesh sieve into a bowl. This removes any undissolved agar-agar particles.
- Divide the agar-agar mixture equally into three separate bowls.
- In the first bowl, add the red food coloring and diced strawberries. Gently stir to combine.
- In the second bowl, add the green food coloring and diced kiwi. Gently stir to combine.
- Leave the third bowl plain for the white layer. Add the tender coconut meat and gently stir.
- Evenly distribute the slivered almonds and flaked pistachios among the three bowls.
- Pour each colored mixture into separate sections of an ice cube tray or small molds.
- Refrigerate for at least 2-3 hours, or until the agar-agar is firm. Chilling allows the agar-agar to set completely.
- Once set, gently remove the agar-agar from the molds. Garnish with Gems candy, if desired.
Recipe Notes
Good To Know
- For even, distinct layers, allow each colored agar layer to set completely at room temperature before gently pouring the next layer; use the back of a spoon to diffuse the pour and prevent colors from mixing.
- To add more texture and flavor contrast, consider layering roasted or caramelized nuts between the colored layers instead of mixing them in, so each bite offers a delightful crunch.
- If you want a vegan version, ensure your candy decorations are gelatin-free and check that the essence used does not contain dairy derivatives.
- For a stunning presentation, unmold the agar agar onto a chilled platter and garnish with fresh mint leaves or edible flowers that correspond to the flag colors for an extra festive touch.
Expert Tips
- Agar agar sets quickly, so have all your ingredients and colors prepared in advance for a smooth layering process.
- Experiment with different flavors and colors of agar agar to create unique and visually appealing desserts. Consider using natural food coloring from fruits and vegetables for vibrant hues.
- Use a clear glass or mold to showcase the beautiful layers of your agar agar creation.
Storage Instructions
- Store leftover agar agar in an airtight container in the refrigerator for up to 3 days.
