Ingredients
Kulfi Base
- 1 ltr Milk
- ½ cup Sugar
- ½ cup Corn Flour
- 1 cup Mawa milk solids
Flavorings and Garnishes
- ¼ cup Chocolate grated
- ½ tsp Vanilla Extract
- 2 tbsp Cardamom-Infused Milk made by steeping crushed green cardamom pods in warm milk

- In a heavy-bottomed saucepan, bring the milk to a boil over medium heat. Reduce the heat to low and simmer, stirring occasionally, until the milk has reduced to ¼ of its original volume. This concentrates the milk's flavor and creates a richer kulfi.
- In a small bowl, whisk together the corn flour with a few tablespoons of the reduced milk until smooth. This slurry will help thicken the kulfi base.
- Slowly pour the corn flour mixture into the simmering milk, whisking constantly to prevent lumps. Continue to cook, stirring, until the mixture thickens enough to coat the back of a spoon.
- Stir in the sugar and mawa. Cook for another minute until the sugar dissolves and the mawa is incorporated. Remove from the heat.
- Divide the kulfi mixture into three equal parts.
- In the first bowl, stir in the vanilla extract. In the second bowl, gently fold in the grated chocolate. In the third bowl, mix in the cardamom-infused milk.
- Pour the vanilla kulfi mixture into the kulfi molds. Freeze for 1 hour to allow the first layer to set.
- After an hour, add the chocolate kulfi mixture to the molds, inserting a popsicle stick into the center of each. Freeze for another hour.
- Finally, pour the cardamom kulfi mixture into the molds. Freeze for at least 5-6 hours, or preferably overnight, until the kulfi is completely solid.
- To serve, gently run the molds under warm water for a few seconds to release the kulfi. Demould and enjoy!
