Ingredients
Herb Paste
- 1/2 cup Fenugreek Leaves methi
- 1/4 cup Mint leaves
- 1/4 cup Coriander dhania
- 2 Chili adjust to your spice preference, green
- 1 inch Ginger
- 1 tbsp Lemon Juice
- 1 tsp Salt or to taste
- 1/4 cup Water as needed for blending
Sev Batter
- 1/2 cup Rice Flour
- 150 gm Gram Flour besan
- 1/2 tsp Chaat Masala
- 1 tbsp Sesame Seeds
- 3 cup Oil for deep frying
Instructions
Prepare the Herb Paste
- Blend together fenugreek leaves, mint leaves, coriander leaves, green chilies, ginger, lemon juice, salt, and water in a food processor until a smooth paste forms. Adjust water as needed.
Make the Sev Batter
- In a large bowl, combine rice flour, gram flour, chaat masala, sesame seeds, and 1 tablespoon of oil. Mix well.
Combine and Knead
- Gradually add the herb paste to the dry ingredients, mixing until a smooth, pliable dough forms. Knead well for a few minutes until everything is well combined.
Prepare for Frying
- Heat the remaining oil in a deep-fryer or large, heavy-bottomed pan to 350°F (175°C). A small pinch of dough dropped in the hot oil should sizzle and float immediately.
Fry the Sev
- If using a sev press, fill the press with the dough and press it into thin strands directly into the hot oil. Fry the sev until golden and crispy, about 2-3 minutes. Remove and drain on paper towels.
Cool and Store
- Let the sev cool completely on paper towels before transferring to an airtight container. Store in a cool, dry place for up to a week.
