Instructions

Prepare the Herb Paste

  • Blend together fenugreek leaves, mint leaves, coriander leaves, green chilies, ginger, lemon juice, salt, and water in a food processor until a smooth paste forms. Adjust water as needed.

Make the Sev Batter

  • In a large bowl, combine rice flour, gram flour, chaat masala, sesame seeds, and 1 tablespoon of oil. Mix well.

Combine and Knead

  • Gradually add the herb paste to the dry ingredients, mixing until a smooth, pliable dough forms. Knead well for a few minutes until everything is well combined.

Prepare for Frying

  • Heat the remaining oil in a deep-fryer or large, heavy-bottomed pan to 350°F (175°C). A small pinch of dough dropped in the hot oil should sizzle and float immediately.

Fry the Sev

  • If using a sev press, fill the press with the dough and press it into thin strands directly into the hot oil. Fry the sev until golden and crispy, about 2-3 minutes. Remove and drain on paper towels.

Cool and Store

  • Let the sev cool completely on paper towels before transferring to an airtight container. Store in a cool, dry place for up to a week.

Serve and Enjoy

  • Serve your Tri-Color Herb Sev as a crispy snack with tea, coffee, or as a party appetizer.

Recipe Notes

Expert Tips for Perfect Tri-Color Herb Sev

  • For a smoother paste, remove the stems from the herbs before blending.
  • Don't overcrowd the pan while frying to ensure even crisping. Fry in small batches.
  • Adjust the amount of green chilies according to your spice preference.
  • For a richer flavor, toast the sesame seeds lightly in a pan before adding them to the batter.
