Prepare the Filling

  • Sauté the chopped bell pepper, cabbage, and carrot in 1 tablespoon of oil until softened. Add the scallions, soy sauce, chili sauce, salt, and pepper. Cook until the vegetables are tender and the flavors have melded. Set aside to cool.

Make the Dough

  • Divide the all-purpose flour into three portions. In separate bowls, make three doughs: one with carrot juice, one with water, and one with coriander paste and a little water. Knead each dough until smooth and elastic, cover, and rest for at least an hour.

Assemble the Wontons

  • Roll out each dough into thin sheets. Cut each sheet into small squares or circles. Place a spoonful of the filling in the center of each square. Fold the dough over to create a wonton shape, pressing the edges to seal. Repeat with all the dough and filling.

Fry the Wontons

  • Heat enough oil in a large pan over medium-high heat. Deep fry the wontons in batches until they are golden brown and crispy. Remove and drain on a wire rack.

Make the Garlic Sauce

  • In a separate pan, heat 1/4 cup oil. Sauté minced garlic and green chilies until fragrant. Add soy sauce, chili garlic sauce, salt, and water. Simmer until slightly thickened.
