Ingredients
- 250 grams Figs dried figs
- 1/2 cup Tamarind Paste
- 1/2 cup Jaggery alternatively, use granulated sugar or coconut sugar for a vegan option.
- 1 tsp Chili Powder adjust to your spice preference, red
- 1 tsp Ginger Powder
- 1 tsp Garam Masala
- 1.5 tsp Salt or to taste
- 1/4 cup Water more may be needed depending on desired consistency
Instructions
Preparing the Figs
- Heat a pan over medium heat. Add dried figs and a pinch of salt. Cook for 5-7 minutes, covered, stirring occasionally, until figs are softened.
Creating the Chutney Base
- Add jaggery and red chili powder to the pan. Mix well and cook for 3-5 minutes, stirring constantly, until jaggery dissolves into a syrup.
Infusing with Spices
- Stir in garam masala and ginger powder. Cook for 1-2 minutes, allowing spices to bloom. Add a tablespoon of water, if needed, to adjust consistency.
Cooling and Serving
- Remove from heat and let the chutney cool slightly. Taste and adjust seasoning as needed. Serve warm or at room temperature.
