  • In a pan, add chopped ginger, sugar and water. Cook the mixture on medium for high flame for 2-3 min till sugar dissolves. Do not over cook the mixture, switch off the flame immediately once sugar dissolves.
  • Cover the pan and steep for minimum 1 hour. Strain the ginger sugar syrup and store the syrup in bottle.
  • To prepare the drink, in a serving glass, add ice cubes and add 3-4 tsp of syrup along with lemon juice and soda. Add in few slices of lemon and serve chilled.

Additional Tips

  • For an extra punch of spice, simmer a few slices of fresh jalapeño or black peppercorns with the ginger syrup, then strain before mixing with carbonated water.
  • If you prefer a less sweet beverage, reduce the sugar in the syrup and compensate with a touch more lemon juice for added brightness and tang.
  • Chill the ginger syrup thoroughly before combining with carbonated water to preserve maximum fizz and avoid excessive foaming.
  • Serve over ice with a sprig of fresh mint or a thin slice of lemon or lime for a visually appealing and aromatic garnish.
