Ingredients
For the Soup:
- 1 tbsp Olive Oil
- 1 Onion finely chopped, small
- 1 tbsp Ginger Juice freshly grated
- 450 gm Carrots peeled and roughly chopped
- 75 ml Lime Juice freshly squeezed, sweet lime preferred
- 4 cup Vegetable Stock low sodium preferred
- 1 pinch Cinnamon ground
- 1-2 tsp Salt or to taste
Instructions
Prepare the Soup
- Sauté the onion in olive oil until softened. Add the ginger juice and carrots, and cook for 5 minutes, stirring occasionally.
- Pour in the vegetable stock and add the cinnamon and salt. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the carrots are tender.
- Remove from heat and let the soup cool slightly.
- Puree the soup using an immersion blender or a regular blender until smooth.
- Stir in the lime juice.
- Taste and adjust seasoning as needed.
- Refrigerate for at least 2 hours to chill thoroughly.
Garnish and Serve
- Before serving, give the soup a good stir.
- Ladle the chilled soup into bowls.
