Ingredients
Ginger Preparation
- 250 gm Ginger fresh ginger root
Spice Blend
- 1 tsp Turmeric Powder haldi
- 1 tsp Chili Powder red
- 1/2 cup Powder five-spice, or substitute with a pre-made masala blend
- 100 gm Mustard Powder
- 2 tsp Cumin Seeds jeera, dry roasted and ground
Liquid & Seasoning
- 1.5 tsp Salt adjust to taste
- 1/2 cup Vinegar fruit vinegar can also be used, white
- 1/2 cup Mustard Oil
Instructions
Prepare the Ginger
- Wash and thoroughly dry 250g of fresh ginger. Cut the ginger into 1-inch pieces and spread them out on a clean surface to air dry for at least 2 hours, or until slightly dehydrated.
Combine Ingredients
- In a large mixing bowl, combine the dehydrated ginger pieces with the turmeric powder, red chili powder, five-spice powder, roasted cumin powder, mustard powder, salt, vinegar, and mustard oil.
Pickle and Cure
- Mix all ingredients thoroughly until the ginger is evenly coated with the spice mixture. Transfer the mixture to a clean, sterilized glass jar with a tight-fitting lid. Seal the jar completely. Let the pickle sit at room temperature for at least one week, or longer for a stronger flavor. Check regularly and gently shake the jar to ensure even distribution of flavor. Refrigerate after a week for longer storage.
