- Begin by collecting fresh heavy cream from full-fat milk. For approximately 250 grams of ghee, you'll need about 500 grams of cream.
- For the best quality ghee, use organic full-fat milk. The higher the fat content, the greater the yield of ghee.
- After boiling and cooling the milk, a thick layer of cream will form on the surface. Gently skim this cream off with a spatula or by straining the milk.
- Store the collected cream in a clean, airtight container in the refrigerator for about 15 days. This allows enough cream to accumulate for a good batch of ghee. Around 500 grams is ideal.
- Once ready, pour the collected cream into a heavy-bottomed pan. A heavy bottom ensures even heating and prevents scorching, which is crucial for making clear ghee.
- Place the pan over medium heat and begin stirring the cream continuously. Patience and consistent stirring are key to achieving a smooth, clear ghee.
- After about 5 minutes, the cream will start to bubble. Maintain constant stirring and keep a close eye on the pan to prevent burning.
- Continue simmering and stirring. After about 15 minutes, the golden ghee will begin to separate from the milk solids, which will turn brown and settle at the bottom of the pan.
- Reduce the heat to low and continue stirring gently. This is the most crucial stage, as the milk solids can easily burn. Stirring ensures even cooking and prevents scorching.
