  • 500 gm Heavy Cream fresh, malai, homemade cream is ideal. you can collect cream from raw milk over 7-10 days.
  • Water as needed, for washing the butter.

Optional for Leftovers

  • Buttermilk leftover buttermilk can be used to make kadhi or paneer.
  • Mawa the residue left after ghee extraction; can be used for baking.

Instructions
 

Cream Collection and Churning

  • Collect fresh cream (malai) daily from raw milk for 7-10 days. Once you have collected sufficient cream, churn it thoroughly using a hand blender, food processor, or manually using a traditional churning method until butter separates from the buttermilk.

Butter Washing

  • Remove the butter and wash it 2-3 times with cold water. This process removes impurities and improves the quality of the ghee.

Ghee Extraction

  • Place the washed butter in a heavy-bottomed pan or kadai over medium heat. Gently heat the butter, stirring occasionally. As the butter heats, it will separate into ghee and milk solids (khoya).

Cooling and Sieving

  • Remove the pan from the heat and allow the ghee to cool completely. Once cooled, carefully strain the ghee through a fine-mesh sieve or cheesecloth into an airtight container. Store in a cool, dark place.
