For the Masoor Dal

  • 1 cup Red Lentil brown lentils, soaked for 4-6 hours, whole

For the Mushroom and Spice Base

  • 4-5 Mushrooms cleaned and sliced or quartered, medium
  • 1 Onion finely chopped, medium
  • 1 tbsp Garlic minced
  • 1 tbsp Tomato finely chopped, or 1 tbsp tomato puree
  • 1-2 Chillies adjust to taste, green, slit or chopped

For the Spices and Seasoning

  • 1 tbsp Mustard Oil or any cooking oil
  • 1 tbsp Ghee desi ghee, for finishing, optional

  • First, soak the whole masoor dal in enough water for 4-6 hours. This ensures a softer texture and quicker cooking time. After soaking, drain the water and boil the dal until tender but not mushy. Set the cooked dal aside.

  • Prepare the vegetables: Wash and slice or quarter the mushrooms. Finely chop the onion and mince the garlic.

  • Heat the mustard oil in a pan over medium heat. Add the minced garlic and sauté for a few seconds until fragrant. This releases the garlic's flavor into the oil.
