Ingredients
For the Masoor Dal
- 1 cup Red Lentil brown lentils, soaked for 4-6 hours, whole
For the Mushroom and Spice Base
For the Spices and Seasoning
- 1 tsp Turmeric Powder haldi
- 1 tsp Coriander Powder dhania
- 1 tsp Cumin Powder jeera
- 1 tsp Chili Powder lal mirch, adjust to taste, red
- 1 tsp Garam Masala
- 1.5 tsp Salt or to taste
For Cooking and Finishing
- 1 tbsp Mustard Oil or any cooking oil
- 1 tbsp Ghee desi ghee, for finishing, optional
Instructions
- First, soak the whole masoor dal in enough water for 4-6 hours. This ensures a softer texture and quicker cooking time. After soaking, drain the water and boil the dal until tender but not mushy. Set the cooked dal aside.
- Prepare the vegetables: Wash and slice or quarter the mushrooms. Finely chop the onion and mince the garlic.
- Heat the mustard oil in a pan over medium heat. Add the minced garlic and sauté for a few seconds until fragrant. This releases the garlic's flavor into the oil. Add the chopped onion and stir-fry until translucent, about 1-2 minutes. Add the mushrooms and continue to cook until they soften and release their moisture.
- Now, add the turmeric powder, coriander powder, cumin powder, and red chili powder to the pan. Stir-fry for a minute until fragrant. Adding the spices at this stage allows them to bloom in the oil, enhancing their flavor. Add the chopped tomato (or tomato puree) and cook for another minute.
- Add the cooked masoor dal to the pan. Season with salt. Mix well and cook for a few minutes, allowing the dal to absorb the flavors of the spices and mushrooms.
- Add the slit green chilies and garam masala. Stir in the ghee for added richness and flavor. Check the seasoning and adjust salt if needed. The ghee adds a wonderful aroma and a touch of richness to the dal.
- Serve the Mushroom and Masoor Dal hot with steamed rice or Indian flatbreads like roti or chapati.
Recipe Notes
Good To Know
- Ensure the masoor dal is well-soaked as this significantly reduces cooking time and improves digestibility.
- Don't overcook the mushrooms; they should be tender yet retain some texture.
- A pinch of asafoetida (hing) can be added to the hot oil along with garlic for enhanced flavour, typical in Indian lentil dishes.
- For a creamier consistency, you can mash some of the boiled masoor dal before adding it to the mushrooms.
- Garnish with freshly chopped coriander leaves for a final touch of freshness.
Expert Tips
- For a richer flavor, try using dried porcini mushrooms along with the other mushrooms. Rehydrate them in warm water before slicing and add the soaking liquid to the dal for an umami boost.
- Adjust the spice level by adding a pinch of red chili flakes or a chopped green chili along with the garlic.
- Serve this dish with brown rice or naan bread for a complete and satisfying meal.
Storage Instructions
- Refrigerate leftovers in an airtight container for up to 3 days. Gently reheat on the stovetop or in the microwave.
