  • 1 cup Spinach fresh spinach leaves; blanched and pureed
  • 2 tbsp Maize Flour
  • 3 tbsp Milk Powder full-fat milk powder recommended
  • 1/2 tsp Cardamom Powder elaichi; freshly ground for best flavor
  • 1/2 cup Sugar granulated sugar; adjust to your sweetness preference
  • 2 tbsp Ghee clarified butter; desi ghee preferred for authentic flavor

For Garnish

  • 1 tbsp Chocolate Chips optional; white chocolate chips recommended for contrast
  • 1/4 cup Water to adjust consistency if needed

Instructions
 

Prepare the Spinach Puree

  • Blanch fresh spinach leaves until wilted. Puree them until smooth using a blender or food processor.

Roast the Maize Flour

  • Heat ghee in a wok or heavy-bottomed pan over medium heat. Add maize flour and roast, stirring constantly, until it turns a light golden brown.

Cook the Halwa

  • Add the spinach puree to the roasted maize flour and cook, stirring frequently, until the mixture thickens slightly. Add sugar and continue to stir until the sugar dissolves completely.
