Ingredients
 

For the Quinoa Mixture

  • 1 cup Quinoa rinsed
  • 2 cup Water
  • 1 cup Spinach finely chopped
  • 1/2 cup Vegetables broccoli), carrot, finely chopped (bell pepper, mixed
  • 1 Onion finely chopped
  • 3 Chilies finely chopped, green
  • 1 medium Potato boiled and mashed

Spices & Binding

For Cooking

  • 2 tbsp Oil for shallow frying
  • 1/4 tsp Salt to taste

Prepare the Quinoa

  • Bring 2 cups of water to a boil. Add rinsed quinoa and mixed vegetables. Simmer for 5 minutes. Stir in spinach and remove from heat. Cover and let it sit for 20 minutes to allow the quinoa to soften.

Combine Ingredients

  • In a large bowl, combine the cooked quinoa mixture with the mashed potato, green chilies, chopped onion, coriander, chaat masala, garam masala, cornflour, and salt. Mix thoroughly until well combined.

Shape the Kababs

  • Shape the mixture into small patties or kababs. You can make them round, oblong, or any shape you prefer.
