Ingredients
For the Ladoos
- 1 cup Semolina rava
- 1/2 cup Quinoa cooked
- 5 tbsp Sugar or to taste
- 2 tbsp Milk
- 1/2 tsp Cardamom Powder
For Frying & Garnish
- 4 tbsp Fruits (raisins, cashews), pistachios, dry, mixed
- Ghee as needed
- Saffron Strands for garnish
Instructions
- Heat ghee in a pan over medium heat. Add the mixed dry fruits and fry until they turn fragrant and lightly golden. This enhances their flavor and adds a pleasant crunch to the ladoos. Set the fried dry fruits aside.
- In the same pan, add a little more ghee and the semolina. Fry the semolina until it becomes fragrant and slightly granular, stirring constantly to prevent burning. This roasting process deepens the semolina's nutty flavor.
- Add the cooked quinoa to the pan and continue to cook for 3-4 minutes, stirring gently. This helps to combine the flavors and toast the quinoa slightly.
- Add the sugar and cardamom powder to the mixture. Stir well to combine. Adjust the sugar quantity to your preference.
- Add the milk and mix thoroughly. The milk helps to bind the mixture together. Check the sweetness and remove the pan from the heat.
- While the mixture is still warm (but cool enough to handle), grease your hands with a little ghee or wear food-safe gloves. Roll small portions of the mixture into round ladoos.
- Garnish the ladoos with saffron strands and the fried dry fruits. Allow them to cool completely before storing. Store the ladoos in an airtight container at room temperature for up to 5 days.
