- 250 gm Pumpkin cubed
- 1 cup Bengal Gram Dal chana dal, parboiled, pre-cooked
Spices & Aromatics
- 2-3 Chili adjust to your spice preference, red, whole
- 1 tsp Panch Phoron bengali five-spice blend (fenugreek, cumin, fennel seeds), mustard, nigella
- 1 tsp Turmeric powder
- 1 tsp Coriander powder
- 1/2 tsp Chili Powder kashmiri chili powder for color, or adjust to your spice preference, red
- 1.5 tsp Sugar
- Salt to taste
Other Ingredients
- 2 tbsp Oil vegetable or coconut oil
- 1 tbsp Mango Powder adds a tangy sweetness, optional
- For garnish Coriander

Preparation
- Heat oil in a frying pan over medium heat.
Sauté Spices
- Add whole red chilies and panch phoron to the hot oil. Sauté until fragrant (about 30 seconds).
Add Pumpkin and Bengal Gram
- Add the cubed pumpkin, pre-cooked Bengal gram, coriander powder, red chili powder, turmeric powder, sugar, and salt. Stir well to combine.
Simmer and Cook
- Add 1/2 cup water, cover, and simmer until the pumpkin is tender (about 15-20 minutes), stirring occasionally.
Finish and Serve
- Stir in the mango powder (if using). Garnish with fresh coriander leaves. Serve hot with rice or naan bread.
