Prepare the Sprouts

  • Soak 1 cup moong beans and 1/2 cup bengal gram in water overnight. Rinse thoroughly and sprout in a sprouter at room temperature for 24 hours, or until sprouts are 1/2 inch long.

Sauté the Spices

  • Heat 1 teaspoon of oil in a pan over medium heat. Add 20 cumin seeds and sauté until they crackle.

Cook the Sprouts

  • Add the sprouted moong beans and bengal gram to the pan. Pour in a little water, cover, and simmer for 5-7 minutes, or until the sprouts are slightly softened.

Prepare the Vegetables

  • Finely chop 1 large onion, 1 large tomato, and 2 green chilies. In a bowl, combine the chopped vegetables with 2 tablespoons of lemon juice.

Combine and Season

  • Remove the sprouts from the heat and gently mix in the prepared vegetables. Season with 1-2 teaspoons of salt, 1 pinch of black pepper, and 1/2 teaspoon of rock salt (optional).
