- 1/2 cup Coconut shredded, unsweetened
- 2 Large Eggs
- 1 tbsp Vanilla Extract

- 1 1/2 cup Rolled Oats
- 1 tsp Baking Soda
- 1 tsp Cinnamon ground

Instructions
Prepare the Oven and Pan
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Cream Together Butter and Sugar
- In a large bowl, cream together the softened butter and brown sugar until light and fluffy. Use an electric mixer for best results.
Add Wet Ingredients
- Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Combine Dry Ingredients
- In a separate bowl, whisk together the whole wheat flour, rolled oats, baking soda, cinnamon, nutmeg, and salt.
Combine Wet and Dry Ingredients
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
Add Carrot and Coconut
- Gently fold in the grated carrots and shredded coconut.
Shape and Bake Cookies
- Scoop rounded tablespoons of cookie dough onto the prepared baking sheet, leaving about 1 inch between each cookie.
Bake the Cookies
- Bake for 12-15 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
Cool and Decorate
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Drizzle with melted dark chocolate, white chocolate, or a cream cheese glaze, if desired.
Recipe Notes
Expert Tips for Perfect Carrot Coconut Oatmeal Cookies
- For extra moisture, add 1/4 cup of applesauce or mashed banana to the wet ingredients.
- If using very large carrots, reduce the amount slightly to avoid overly moist cookies.
- Toasted coconut adds a delightful crunch; toast the coconut in a dry skillet over medium heat until lightly browned before adding it to the dough.
- Don't overbake the cookies! Slightly underbaked cookies will be softer and chewier.
