- 1/2 cup All-Purpose Flour or soy flour
- 1/2 cup Rolled Oats
- 1 tsp Baking Powder

- 2 Large Eggs
- 1 cup Vegetable Oil or soy oil
- 1 tbsp Lemon Juice
Instructions
Prepare the Ingredients
- Preheat your oven to 190°C (375°F). Grease and flour a 9-inch baking pan.
- Grate the carrot and apple. Finely chop the dried apricots and almonds.
- In a medium bowl, whisk together the multigrain flour, all-purpose flour, oats, and baking powder.
Combine Wet and Dry Ingredients
- In a large bowl, cream together the sugar, eggs, and oil until light and fluffy.
- Stir in the lemon juice.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Fold in Remaining Ingredients
