Ingredients
 

For the Moong Dal

  • 100 gm Lentils moong dal, without skin, split, yellow
  • 1.5 tsp Salt or to taste
  • 1 tbsp Ghee or deshi ghee
  • 2 tsp Cumin Powder from 2 tsp whole cumin seeds, roasted, roasted and ground
  • 1 tsp Salt black
  • 2 tbsp Lemon Juice
  • 2 tbsp Onion chopped, finely
  • 2 tsp Chili Powder or to taste, red
  • 4 Chili whole, dry, for frying, red

Instructions
 

Prepare the Moong Dal

  • Wash and soak the moong dal in water for 30 minutes.
  • Drain and add the dal to a pot with 6 cups of water. Bring to a boil, then reduce heat and simmer until the dal is soft and forms a thick paste.
  • Stir occasionally to prevent sticking.

Fry the Chillies

  • While the dal simmers, heat 1 tbsp ghee in a small pan. Gently fry the whole dry red chilies until crispy. Set aside.

Fry the Potatoes

  • Heat 2 tbsp vegetable oil in a pan. Add the diced potatoes and salt. Fry until golden brown and crispy. Remove from heat and set aside.

Assemble the Chaat

  • In a serving bowl, place the cooked moong dal.
  • Garnish with the fried red chilies, roasted cumin powder, black salt, red chili powder, chopped onion, and lemon juice.
  • Add a generous dollop of butter.

Final Garnish and Serve

  • Add the crispy fried potatoes to the bowl.
  • Garnish with chopped green chilies and chaat masala. Serve immediately and enjoy!
