  • First, make the green paste. Combine the blanched leafy greens, lemon juice, green chilies, and salt in a blender or food processor.

  • Blend until smooth. Set aside.
  • In a pan, heat 1 tablespoon of oil. Add the boiled and mashed potatoes.

  • Add the roasted and ground cumin seeds, roasted and ground coriander seeds, red chili powder, garam masala, asafoetida, and salt.
  • Sauté for a few minutes until the spices are fragrant and the potatoes are heated through.
  • Stir in the green paste and mix well. Remove from heat and set aside.
  • In a large bowl, combine the whole wheat flour and salt. Gradually add water and knead until a soft dough forms.
  • Divide the dough into equal-sized balls.
  • Roll out each ball into a thin circle.
