Ingredients
For the Green Paste
- 1 cup Leafy Greens blanched (such as spinach or kale)
- 1 Tbsp Lemon Juice
- 1-2 Chilies green
- 1/2 tsp Salt
For the Spiced Potato Filling
- 1 cup Potato boiled and mashed
- 1 tsp Cumin Seeds roasted and ground
- 1 tsp Coriander Seeds roasted and ground
- 1/2 tsp Chili Powder red
- 1 tsp Garam Masala
- 1/4 tsp Asafoetida (hing)
- 1.5 tsp Salt or to taste
- 1 Tbsp Oil for sautéing
For the Dough
- 1 cup Whole Wheat Flour whole
- Water as needed
For Cooking
- Oil as needed, for shallow frying
Instructions
- First, make the green paste. Combine the blanched leafy greens, lemon juice, green chilies, and salt in a blender or food processor.
- Blend until smooth. Set aside.
- In a pan, heat 1 tablespoon of oil. Add the boiled and mashed potatoes.
- Add the roasted and ground cumin seeds, roasted and ground coriander seeds, red chili powder, garam masala, asafoetida, and salt.
- Sauté for a few minutes until the spices are fragrant and the potatoes are heated through.
- Stir in the green paste and mix well. Remove from heat and set aside.
- In a large bowl, combine the whole wheat flour and salt. Gradually add water and knead until a soft dough forms.
- Divide the dough into equal-sized balls.
- Roll out each ball into a thin circle.
- Place a spoonful of the spiced potato filling in the center of each circle.
- Bring the edges of the dough together to enclose the filling completely, pinching to seal.
- Gently roll out the filled dough again into a flatbread.
- Heat a flat griddle or tawa over medium heat.
- Place the flatbread on the hot tawa and cook for a few minutes per side, drizzling with oil as needed, until golden brown and cooked through.
- Serve the hot green flatbreads immediately.
