Ingredients
For the Potato Filling
- 2 Potatoes boiled and mashed
- 3 tbsp Chili Paste adjust to your spice preference. can substitute with finely chopped green chilies., green
- 2 tbsp Yogurt plain yogurt or curd
- 1 tsp Ginger-Garlic Paste
- 1/2 tsp Dry Mango Powder dried mango powder, adds tartness
- 1/2 tsp Salt
- 1/4 tsp Sugar
For the Dough
- 2 cup All-Purpose Flour atta
- 1 tsp Salt
- 1 tsp Sugar
- 2 tbsp Oil vegetable or ghee
- 1/2 cup Water as needed to make dough
Instructions
Prepare the Potato Filling
- Boil and mash the potatoes. Add green chili paste, yogurt, ginger-garlic paste, amchur powder, salt, and sugar. Mix well to combine.
Make the Dough
- In a large bowl, combine the all-purpose flour, salt, and sugar. Add hot oil and mix thoroughly. Gradually add water, mixing until a soft, pliable dough forms. Knead for 5-7 minutes until smooth and elastic.
Assemble and Cook the Parathas
- Divide the dough into small equal-sized balls. Roll each ball into a thin circle. Place a spoonful of the potato filling in the center. Bring the edges together, pinching to seal. Gently flatten the stuffed dough ball into a circle.
