Ingredients
For the Dough
- 3 cup Whole Wheat Flour whole
- 1.5 tsp Salt or to taste
- 1/4 tsp Turmeric Powder
- 1 tsp Chili Powder red
- 1/2 tsp Cumin Seeds
- 1/2 tsp Garam Masala
For Cooking
- 2 tbsp Oil plus extra for cooking
- Ghee Or Oil for cooking the parathas
Instructions
- Dry roast the moong dal in a pan over medium heat until fragrant. This enhances the nutty flavor of the dal.
- Add 4 cups of water to the roasted dal and bring to a boil. Reduce heat and simmer until the dal is soft and mushy, adding more water if needed.
- Once the dal reaches a thick, creamy consistency, stir in the chopped green chili and grated ginger. This infuses the filling with aromatic spices.
- Remove the dal mixture from the heat and let it cool completely. This prevents the dough from becoming sticky.
- In a large bowl, combine the whole wheat flour, salt, turmeric powder, red chili powder, cumin seeds, and garam masala.
- Add the cooled dal mixture to the dry ingredients and mix well. Gradually add water and 2 tablespoons of oil, kneading until a soft, pliable dough forms. Kneading develops the gluten, resulting in softer parathas.
- Cover the dough and let it rest for 15 minutes. This allows the gluten to relax, making the dough easier to roll.
- Divide the dough into lemon-sized balls. Roll each ball into a thin circle on a lightly floured surface.
- Heat a tawa or griddle over medium heat. Cook each paratha with ghee or oil on both sides until golden brown spots appear and the paratha is cooked through. This gives the parathas a lovely crispy texture.
- Serve the hot, flavorful Moong Dal Parathas with yogurt and your favorite pickle.
Recipe Notes
Good To Know
- For extra softness, add a tablespoon of yogurt to your wheat flour while kneading the dough. This helps keep the parathas tender even after cooling.
- If you enjoy a nuttier flavor and added texture, sprinkle some roasted sesame seeds into the moongh dal filling.
- To infuse more aroma, add a pinch of ajwain (carom seeds) to the dough. This boosts flavor and aids digestion.
- For a vegan version, skip the yogurt in the dough and use plant-based curd for serving. A drizzle of mustard oil while cooking adds a traditional North Indian touch.
Expert Tips
- Don't overfill the parathas, as this can make them difficult to seal and cook evenly. Aim for about 2-3 tablespoons of filling per paratha.
- Roll the parathas evenly to ensure they cook uniformly. Use a light touch to prevent them from becoming too thin.
- Cook the parathas over medium heat to allow the filling to cook thoroughly and the outside to become golden brown and crispy.
Storage Instructions
- Store leftover parathas in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to 4 days.
- Reheat on a lightly oiled griddle or in a dry skillet over medium heat until warmed through and crispy.
