Ingredients
 

Dry Ingredients

  • 1 1/2 cup Rolled Oats use old-fashioned rolled oats, not quick-cooking.
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 tsp Cinnamon ground
  • 1 tbsp Sugar or to taste; adjust to your preference., granulated

Wet Ingredients

  • 1 cup Milk any milk works: whole milk, almond milk, etc., soy milk
  • 2 Large Eggs
  • 2 tbsp Butter unsalted butter is preferred.

Topping

  • 3 tbsp Honey
  • 2 tbsp Butter for cooking the pancakes.

Instructions
 

Prepare the Oat Flour

  • Blend rolled oats in a high-speed blender until a fine flour consistency is achieved.

Combine Dry Ingredients

  • In a medium bowl, whisk together oat flour, baking powder, salt, cinnamon, and sugar. Set aside.

Combine Wet Ingredients

  • In a separate bowl, whisk together milk, eggs, and melted butter until well combined.

Combine Wet and Dry Ingredients

  • Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Do not overmix.

Cook the Pancakes

  • Heat a lightly oiled griddle or non-stick pan over medium heat. Pour 1/4 cup of batter onto the hot griddle for each pancake.

Flip and Finish

  • Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface and the edges look set.

Serve

  • Serve immediately, drizzled with honey. Enjoy!
