Ingredients
Dry Ingredients
- 1 1/2 cup Rolled Oats use old-fashioned rolled oats, not quick-cooking.
- 1 tsp Baking Powder
- 1/2 tsp Salt
- 1 tsp Cinnamon ground
- 1 tbsp Sugar or to taste; adjust to your preference., granulated
Wet Ingredients
- 1 cup Milk any milk works: whole milk, almond milk, etc., soy milk
- 2 Large Eggs
- 2 tbsp Butter unsalted butter is preferred.
Instructions
Prepare the Oat Flour
- Blend rolled oats in a high-speed blender until a fine flour consistency is achieved.
Combine Dry Ingredients
- In a medium bowl, whisk together oat flour, baking powder, salt, cinnamon, and sugar. Set aside.
Combine Wet Ingredients
- In a separate bowl, whisk together milk, eggs, and melted butter until well combined.
Combine Wet and Dry Ingredients
- Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Do not overmix.
Cook the Pancakes
- Heat a lightly oiled griddle or non-stick pan over medium heat. Pour 1/4 cup of batter onto the hot griddle for each pancake.
Flip and Finish
