Prepare the Batter
- Soak the chickpeas and brown rice in plenty of water for at least 8 hours, or preferably overnight.
- Drain the soaked chickpeas and rice completely.
- In a blender, combine the drained chickpeas, rice, green chilies, grated ginger, 1 cup grated bottle gourd, salt, and enough water to facilitate smooth blending.
- Blend until you achieve a smooth and slightly thick batter.
- Transfer the batter to a large bowl. Stir in the chopped coriander leaves and remaining 1/2 cup of grated bottle gourd.
- Add a little more water if necessary to reach your desired batter consistency; it should be slightly thicker than pancake batter.
Cook the Dosas
- Heat a non-stick tawa (griddle) over medium heat.
- Once hot, pour a small ladleful of batter onto the center of the tawa, spreading it thinly and evenly to form a small circle.
- Cook for 2-3 minutes, or until the edges begin to lift and the bottom is lightly browned.
- Carefully flip the dosa and cook the other side for another 1-2 minutes, until golden brown.
- Remove the dosa from the tawa and serve immediately with chutney and sambar.
- Repeat the process with the remaining batter.
